Salmon Salad Sandwiches

Directions

  1. Place first 4 ingredients in medium bowl. Gently fold in mayonnaise to taste. Season with salt and pepper.
  1. Halve focaccia squares horizontally. Top bottom sections with arugula or spring mix, then salmon mixture, followed by sliced tomato and topping with remaining focaccia. Serve with kettle chips.

  •  2 grilled (6 oz.) salmon fillets, skinned, pin boned, and flaked
  •  2 green onions, finely sliced
  •  1 Tbsp. fresh lemon juice
  •  1 tsp. grated lemon peel
  •  1/2 cup mayonnaise or aioli
  •  4 (4 inch) squares herbed focaccia
  •  Arugula or spring mix
  •  Fresh tomato, sliced
