Grilled Alaska Coho Salmon


  1. Heat barbecue grill to medium high. Place salmon, skin down, on top of foil. Turn up edges of foil. Salt and pepper top of fish. Sprinkle brown sugar evenly over the salmon. Place butter on top of sugar. Pick up foil with salmon and place in the middle of barbecue grill.
  2. Pour vermouth around fillet. Squeeze lemon over fish. Close lid and grill until fish flakes.
  3. Use a total cooking time of 10 minutes per inch thickness of your fillet. Serve immediately.

  • 1 coho salmon fillet, skin on
  • 2 Tbsp. butter, diced
  • 2 Tbsp. brown sugar
  • 1/2 lemon
  • 1/2 cup vermouth
  • Salt and pepper to taste
  • Foil to cover bottom of salmon
