Coho Tomato-Basil Bruschetta


  1. Preheat oven to 400F. Line baking sheet with aluminum foil and lightly oil.
  2. Using a small dish, mix together garlic, salt, pepper, paprika, lemon zest, lemon juice, and olive oil.
  3. Place salmon fillets on lined baking sheet and rub garlic mixture evenly into each fillet Let marinate for at least 30 minutes.
  4. Broil for 8–9 minutes until golden brown, flaky, and cooked through.

Tomato-Basil Topping: Starting with tomatoes, mix all ingredients in small bowl. Cover and refrigerate until ready to serve. Once salmon has rested, top fillets with tomato-basil mixture, including juices, and garnish with lemon wedges. Serve with roasted potatoes or rice pilaf.
