Cajun Blackened Rockfish

DIRECTIONS

In a bowl, mix together seasonings. Heat a large cast iron skillet over high heat for about 8 minutes.

Two Cooking Options:

  • Dip fillets in melted butter (or olive oil) and sprinkle generously with the seasoning mixture. Place fillets in hot skillet. Cook until coating on underside of fillet turns black, 3 to 5 minutes. Turn fish over. Pour 1 Tbsp. of melted butter or olive oil over the fillet and cook for 2 minutes or until fish flakes easily with a fork.
  • Use seasonings as a rub. Rub fillets with seasonings. Pour melted butter (or olive oil) into hot skillet. Place fillets in skillet and cook until coating on the underside of the fillet turns black, 3 to 5 minutes. Turn fish over and cook 2 more minutes or until fish flakes easily with a fork.
