Sauteed Salmon Burgers

Craving burgers but don't feel like barbecuing? Here's a fantastic recipe for stove-top coho burgers to grace your summer menus. To start, puree four ounces of salmon in your food processor with shallots, garlic, lemon juice, mustard, and cayenne. The puree will serve as a binder to give the burgers shape. Then cut a pound of salmon into chunks and mix in a bowl with the puree, panko crumbs, and salt and pepper. Mold the mixture into four hefty patties, coat them in more panko, pop them in a skillet and sauté them in olive oil, flipping once, until golden brown. I like to serve them on brioche buns stacked with butter lettuce, slices of red onion and tomato, and a dollop of tartar sauce. The refreshing summer accompaniment? Chilled pale ale or Pinot Noir.
