Smoky Citrus Chinook

Directions

  1. Preheat oven to 400 degrees. Combine first 12 ingredients in bowl; brush both sides of fish with juice concentrate. Reserve remaining concentrate.
  2. Place fish on broiler pan lined with well-oiled foil (or cooking spray for easy clean up). Bake for 15 minutes or until fish flakes easily with a fork. Place remaining orange mixture in small saucepan; bring to boil, and cook until reduced to 1/2 cup (about 2 minutes).
  3. Serve with rice and roasted vegetables. Also delicious in fish tacos.

  • 2 Tbsp. fresh lime juice
  • 2 Tbsp. honey
  • 4 tsp. chili powder
  • 3 tsp. smoked paprika
  • 1 tsp. ground cumin
  • 1/2 tsp. salt
  • 1/2 tsp. ground coriander
  • 1/4 tsp. cayenne pepper
  • 2 Tbsp. kosher salt
  • 1 Tbsp. ground Black pepper
  • 1 (6 oz.) can thawed orange juice concentrate
  • 4 (6 oz.) king salmon fillets, skinned and pin boned
  • Cooking oil or nonstick cooking spray
