Cheese Sauce
- In a small saucepan over low heat, combine the cheese, milk, and butter.
- Stir gently until fully melted and smooth.
- Add spices and adjust consistency with additional milk if needed.
- Keep warm over low heat until ready to serve.
Halibut Salad & Toast
- In a mixing bowl, combine all halibut salad ingredients and mix well. Set aside.
- Preheat a skillet (cast iron works best).
- Lightly spread mayonnaise on both sides of each sourdough slice.
- Toast in the skillet until golden brown on both sides.
To Serve
- Place toasted sourdough on a plate.
- Layer with sliced tomato, then top with approximately 5 ounces of halibut salad.
- Spoon warm cheese sauce over the top and serve immediately.
