What do Southeast Alaska and the Gulf of Mexico have in common? Culinary traditions based on a bounty of delicious fish. Inspired by the coastal town of Veracruz’s famed recipe for snapper, this dish is a yummy variation perfect for king salmon. The bed of chopped tomatoes, garlic, olives, capers, and jalapeño peppers showcases your perfectly grilled fillets. Serve it all up with rice and steamed veggies—and Chardonnay, Tempranillo, or your favorite Mexican beer. Of course, you can also try this recipe with lingcod, halibut, or rockfish.
