Tequila Lime Halibut
Pacific halibut is always delicious, but this recipe ups the wow factor when it comes to presentation. Picture those beautiful fillets, seasoned with cumin, sautéed with olive oil and garlic, grilled or seared until golden brown … then spiked with tequila, lit on fire (okay, flambéd), and doused with a citrusy sweet cilantro-lime sauce. It’s a natural for entertaining and getting compliments, both on your cooking and your catch. To serve, plate the fillets and serve with warm tortillas and a mini buffet of taco garnishes: grated cheese, guacamole, chopped cabbage, shredded lettuce, sliced radishes and jalapeños…. Or keep it simple and just add your favorite salsa. Either way, the finishing touch is Mexican beer or tangy margaritas.
