Pepper Salmon Skewers

Ready to fire up the grill again? Then try this handy recipe for salmon kebabs. It’s a tasty spring dish for broiling or the barbecue, and great for entertaining. It’s also a snap to make—a matter of mixing ground cumin, red pepper flakes, and chopped oregano; slicing up lemons, purple onions, and bell peppers; and threading the latter onto bamboo skewers, along with delicious one-inch chunks of king or silver salmon. Then brush with olive oil and season with the spice mixture. You can do the prep beforehand, refrigerate the skewers, then pop them on the barbecue or in the oven after your guests arrive. I like to accompany them with a creamy polenta and a chilled Sauvignon Blanc or an American-style pale ale.
