CHEF RECIPE
Middle Eastern Style Dutch Oven Ling Cod
This dish is traditionally cooked in a tagine, the cone-lidded clay pot used in North African and Middle Eastern kitchens, but you don't need one. A Dutch oven or a heavy-lidded cast iron skillet, which most kitchens already have, does the job beautifully. Cod is a mild, versatile fish that takes on whatever flavors surround it, and here that means warm, earthy spices for depth, tomatoes and lemon zest for brightness, and a finish of olives and toasted pine nuts for a bit of richness. The result is a simple, comforting dish with a lot going on in every bite.
