Seared Tequila Lime Halibut

DIRECTIONS

  1. Season halibut with salt, pepper, and cumin.
  2. Lightly oil nonstick pan with vegetable oil. Using high heat, sear halibut fillets about 2 minutes on each side, forming a crust.
  3. Remove fillets from pan and turn heat down to medium. Add olive oil and garlic, sauté for 2 minutes. Remove pan from heat and add tequila and water. Return pan to heat and flambé until alcohol has been cooked out. Add cilantro, lime juice, lime zest, and olive oil to sauté pan and heat until sauce is warmed through.
  4. Add fillets to sauce and simmer until fish is cooked through, basting constantly while cooking.
