Curried Silver Salmon with Rice

Directions

  1. Using a food processor, add pistachios, almonds, curry powder, sesame seeds, and 2 Tbsp. of the chives. Mix for 20 seconds or until finely chopped. Spoon pistachio mixture onto baking sheet. Dredge salmon fillets in mixture, covering both sides.
  2. Pour olive oil into hot cast-iron skillet on medium to high heat. Sear both sides of salmon, about 1 minute per side or until golden brown (watch carefully because chopped nuts can burn easily if heat is too high). Salmon should be medium rare. Or bake in a 385 F oven until desired doneness.
  3. While salmon is resting, mix salt, pepper, honey, and lime juice in a bowl.
  4. Plate fillets, placing atop bell pepper slices and drizzling with honey-lime mixture. Sprinkle with remaining chives and serve with warm rice, parsley sprigs, and lemon wedges.
