Meet Chef Timothy James Chappell

Executive Chef Chappell hails from South Carolina where he grew up on his dad’s commercial fishing boat, thus his love for seafood. Chef Chappell graduated from prestigious Johnson and Wales University where he studied culinary arts with an emphasis in classical French cuisine.
Over the last 15 years, Chef Chappell has developed Atlantic and Gulf Coast “new” southern seafood recipes fusing his love for Mediterranean / North African aromatic spices and French techniques. Of late, Chef Chappell has focused on traditional Texas and Tennessee recipes working with prime cuts of meats including game and birds.

In the early 1900's, Waterfall was the largest salmon packing plant on the west coast of Prince of Wales Island. Like most canneries in Alaska, this remote operation on the Ulloa Channel was a complete, self- sufficient, temporary community. When the season was over, all but a few workers departed until the next summer's migration.
